Description

These roasted asparagus and mushrooms are delicious.

Ingredients

  • ✓nonstick cooking spray
  • ✓1 bunch fresh asparagus, trimmed
  • ✓½ pound fresh mushrooms, quartered
  • ✓2 teaspoons olive oil
  • ✓2 sprigs fresh rosemary, minced
  • ✓kosher salt and freshly ground black pepper to taste

Instructions

Preheat the oven to 450 degrees F (230 degrees C). Lightly grease a baking tray with nonstick spray.

Place asparagus and mushrooms in a bowl. Drizzle with olive oil, then season with rosemary, salt, and pepper; toss well. Lay vegetables on the prepared tray in an even layer.
